I officially move to Austin in two weeks! And Joe is leaving in a week. I still think I’m a little bit in shock but it’s all starting to feel very real. We pack up all of our belongings into a POD tomorrow and are slowly starting to say goodbye to family and friends. I’m getting excited, nervous, anxious…all of it. It will be here before we know it.
These last two weeks I’m trying to use up everything in my freezer so I have no wasted food. A few weeks ago, Joe and I attended a sausage-making party hosted by his boss. We got our hands dirty and helped crank out some sausage (yes we did!). Well after that I ended up with a freezer full of homemade sausage, perfect for some Italian burgers.
This recipe was in Joe’s grandma’s cookbook even though she says she doesn’t remember ever making these… We first started making this on a grill pan in our tiny one-bedroom apartment (smoking out the place) and haven’t stopped. If you eat dairy, adding some fresh mozzarella would be perfect.
