This brisket is seriously amazing. I used my Dad’s famous brisket recipe that uses store-bought ketchup, BBQ sauce and Worcestershire sauce and altered it to use homemade versions of those ingredients. I searched for Paleo-friendly recipes and have included the links below. You could use any homemade version you like or any Paleo-friendly store-bought version. The brisket cooks low and slow and turns out very tender and juicy. I was also able to purchase a brisket from a local farmer, Winter’s Family Beef located in Brady, TX, at the Mueller Farmer’s Market here in Austin. They have delicious beef and love their cows!

This past weekend Joe and I headed to San Antonio to celebrate my birthday and have a weekend away. We had a lot of fun wandering around the city, eating lots (and I meant lots!) of food and just relaxing. We stayed at Noble Inns which was close to the River Walk and really enjoyed our stay. The breakfast was awesome each morning and the house was really cute. There was even a covered spa pool in the backyard which was perfect for a relaxing afternoon.

Two food highlights for us included the pizza at Il Sogno Osteria and the burger at Zinc Bistro & Bar. The pizza was honestly the best pizza I have ever had. It had fresh mozzarella, a roasted garlic sauce, spinach, prosciutto, potatoes and a fried egg. It was definitely not Paleo, but beyond delicious. The burger at Zinc had smokey cheddar cheese, a Parmesan crisp (yum!), bibb lettuce and a homemade smokey ketchup alongside homemade home fries. So delicious. Joe and I also shared the brioche apple bread pudding with toffee ice cream. Let’s just say my belly wasn’t feeling too great after all that gluten, but every so often it’s necessary!

Ingredients
- 1/2 cup BBQ sauce (I used this recipe: http://www.paleocupboard.com/bbq-sauce.html)
- 1/2 cup ketchup (I used this recipe: http://paleomg.com/ketchup-rosemary-sweet-potato-fries/)
- 1/4 cup apple cider vinegar
- 1 tablespoon Worcestershire sauce (I used this recipe: http://paleotable.com/2012/11/paleo-worcestershire-sauce/)
- 1/4 teaspoon pepper
- 1 medium onion (sliced)
- 2 bay leaves
- 3lb brisket

If making homemade BBQ sauce, ketchup and Worcestershire sauce, make the day ahead. Otherwise look for Paleo-friendly versions if possible. | |

Pre-heat oven to 325 degrees F. Combine all sauce ingredients and mix well. Place brisket in a shallow baking dish and coat in the sauce. Lightly cover in foil and bake for 3 hours. | |
Step 3 | |
Let brisket cool completely (can even put in the fridge) and slice thinly against the grain. Cover and put in the fridge until ready to eat. | |
Step 4 | |
Once ready to serve, place covered brisket and sauce back into the oven for 30-40 minutes until heated through. Serve with extra BBQ sauce if desired. Eat up! |
